Peanut Butter Banana Pancakes

INGREDIENTS
    • 1 1/2 cups whole wheat flour
    • 2 t baking powder
    • 2 mashed ripe bananas (about 2/3 cup)
    • 1 cup non-dairy milk
    • 2 t vanilla extract
    • 1/2 t cinnamon
    • 1/4 t allspice
    • Peanut butter (or almond butter, macadamia nut butter, etc. just make sure it's easily spreadable)

METHOD
Mix the dry ingredients together.

Mash the banana in a separate mixing bowl; into this bowl mix the milk and vanilla extract. Pour the liquid ingredients into the dry ingredients and stir until well combined.

Heat a griddle on medium high heat. Put 1/4 cup of batter on the griddle for each pancake. When the pancake begins to bubble, turn it over and spread some peanut butter on the cooked side. Remove from griddle when cooked.

i tried this recipe (without the pb on top) and it was way too thick. when i went to fry them (i did use 1/2 cup instead of 1/4...maybe that would have helped) they were really thick and lumpy. perhaps my banana's were not ripe enough, but i can't see how even if they were it would have been enough liquid to make good batter. (hold while i take a bite)............they're ok, but not that good. maybe the PB would make it better but i'm not in the mood for that. perhaps i should learn to follow directions and it may turn out right. anyway, take no offese author, just thought one might like to know my experience with this recipe. peace!
