Mushroom Gravy

INGREDIENTS
    • 1/2 onion, chopped
    • 1 clove garlic
    • 1 T vegetable oil
    • 1 cup sliced mushrooms
    • 2 T whole-wheat pastry flour
    • 1 cup water or vegetable stock
    • 1 T soy sauce
    • 1/2 t molasses
    • 1/4 t each: savory and thyme
    • Dash of pepper

METHOD
In a medium saucepan over medium-high heat, saute onion and garlic in oil until soft. Add mushrooms and cook 5 minutes over low heat. Stir in flour; cook over medium heat for 2 minutes. Add water or stock, soy sauce, and molasses. Cook, stirring, until thickened, about 3 to 4 minutes. Season with herbs and pepper.

NOTES
For a richer flavor, replace part of the oil with vegan margarine.

tried this today with baked potatoes, quorn roast, asparagus and beets. the gravy really made the dish, though i added 2 tsp of salt.

i blended it at the end for a creamy texture... needed to add more water to get it to blend well.

I tried this today because I couldn't find non-animal mushroom gravy in the store. They all had beef fat in them. I was trying to make the Mushroom Stroganoff in the Peta Vegetarian Starter Kit which called for mushroom gravy. I think this recipe was better before I mixed it into the recipe. The Peta recipe was good, but didn't have the punch this had. Since I didn't have molasses, I used a little brown suger. Really good. I'll make again.
