Mrs Falafel's Black Bean Mole

INGREDIENTS
    • 1 T olive oil
    • 1 medium onion, chopped
    • 3 cloves garlic
    • 1 courgette, chopped
    • 1 green or red pepper
    • 100 g / 3.5 oz sweetcorn
    • 2 t mexican spice, (or more, to taste)
    • 1 t cumin
    • 1 T oregano
    • 1 x 16 oz / 450 g can tomatoes or 500 g / 18 oz passata
    • 500 g / 18 oz black beans
    • 2 t cocoa (green & blacks)
    • Salt and freshly ground pepper, to taste

METHOD
Heat oil in large saucepan. Add onion, sauté until golden brown. Add garlic, green pepper and courgette. Add mexican spice, cumin and oregano; sauté for 2 mins. Add tomatoes or passata, black beans and sweetcorn and cocoa. Cover, simmer 20 minutes.

Season to taste.
