Lentils and Rice

INGREDIENTS
- 1/2 cup basmati rice
- 1/2 cup lentils (red are the prettiest)
- 1 1/3 cup broth or water
- Some veggies chopped up
- Spices, oil, salt
METHOD
Heat up 2 t oil and sauté veggies in it until they are kinda soft. Add rice and lentils and sauté for two minutes. Add spices, water and a pinch of salt and stir once to mix it up. Don't stir it any more or you'll break the lentils. Cover and bring to a gentle boil, then lower the heat to simmer. Let it cook for twenty minutes without looking at it or anything. When the water is absorbed take it off the heat for five minutes, then stir it up and eat.
