Lafayette Lima Beans

INGREDIENTS
- 1 onion, minced
- 2 tablespoon oil
- 8 cups water
- 2 cups dry lima beans
- 1 small bell pepper, minced
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon cayenne
METHOD
In a 4 quart / 4 liter pot, saute the onion for 10 minutes, stirring often. Add the remaining ingredients, bring to a boil, lower the heat to a simmer and cook for an additional 45 minutes. They should be real juicy, so if necessary, add more water or some veggie stock. Serve with corn bread.
