INGREDIENTS
      Dry Ingredients

    • 1 cup flour (I made oat flour by putting rolled oats in the blender)
    • 3/4 cup turbinado sugar or sucanat
    • 1/4 cup unsweetened cocoa
    • 1 T baking powder
    • 3/4 t cinnamon
    • 1/4 t nutmeg
    • Dash of salt

      Wet Ingredients

    • 1/2 cup rice or soy milk
    • 1/4 cup applesauce or oil
    • 1 t vanilla extract
    • 3/4 cup sucanat (or very molasses-tasting unrefined sugar)
    • 1/4 cup unsweetened cocoa
    • 1 cup water
    • 1/4 cup very strongly brewed espresso

      Vanilla Custard

    • 1/2 lb / 225 g tofu
    • Powdered vanilla rice milk or soy milk, 3 T or more to taste
    • Granulated sugar, 3 T or more to taste

METHOD
Heat oven to 350F/180C. Combine dry ingredients, add wet ingredients. Spoon into an 8x8 pan.

In a bowl, combine the remaining sucanat/sugar, unsweetened cocoa, water and espresso. Stir together and pour over brownie batter. This makes a gooey fudgy sauce on the botton of the brownies. Bake for 40 minutes.

Vanilla Custard

Mix ingredients in a blender until smooth, using 3 tablespoons each of sugar and powdered milk replacer. Taste, then modify as necessary.

Serve the brownies hot with some of the vanilla custard. Yum!
