Hell No Beans and Rice

INGREDIENTS
    • 4 lb / 1.9 kg pinto beans
    • 1 onion
    • 2 lb / 950 g brown rice
    • Garlic
    • Salt and pepper

METHOD
Let the beans soak in water for five to twelve hours depending on how anxious you are. Rinse and put them in a large pot. Cook for about two hours until they become soft. Be careful not to boil the beans too hard or the skin will come off leaving a gross mess. Fifteen minutes before they are done, add the onion cut up and some garlic, salt and pepper to taste. This will feed a lot of people for a few meals. Mix with some cooked brown rice and it will be very nice.
