Energy Balls

INGREDIENTS
    • 1 cup toasted whole wheat flour
    • 1 cup honey (not vegan, I know, so substitute maple syrup)
    • 1 cup peanut butter (or any nut butter, I suppose)
    • 1 cup sunflower seeds
    • 1 cup wheat germ
    • 1 cup carob powder (or cocoa powder)

METHOD
Mix well and roll balls in wheat germ.

Agave nectar makes a great replacement for honey, and also has a low glycemic index. (I'm not 100% sure what that means, but apparently it's good).

Absolutely agree - agave makes an excellent honey + sugar replacement.

Also, here is some further information about the low glycemic index referred to above.
