Easy Fudge

INGREDIENTS
    • 6 T vegan margarine
    • 3 1/2 cups confectioners' sugar (also known as powdered sugar)
    • 1/2 cup sifted cocoa powder
    • 1 t vanilla extract
    • 1/4 cup soy milk
    • 1 cup chopped nuts (optional) - try walnuts

METHOD
Lightly grease a 5 x 9 inch (13 x 23 cm) loaf pan using a little of the margarine.

Place the remaining margarine, sugar, cocoa, vanilla and soy milk in a heatproof mixing bowl or the upper part of a double boiler (i use a small pot in a large pot of water). Place the bowl or boiler over simmering water and stir until smooth. Add nuts if desired.

Pour the mixture quickly into the prepared pan. Chill thoroughly and cut into squares.

Serves: 2 to 3 dozen squares.
Preparation time: 15 min.


NOTES
Rumour has it that this is a little too sweet. Try cutting the sugar (by up to half) and adding more cocoa. You can really play with this recipe until it's just right for you.

Ohh, and as for the amount it serves... 2 to 3 dozen squares?! Ha... if you cut them like I do, 2 to 3 squares. One for breakfast, one for lunch and one for supper. :-)
