Cauliflower Tarator

INGREDIENTS
  • 1 tablespoon salt
  • 1 medium cauliflower
  • 4 tablespoons lemon juice
  • Tarator sauce

Tarator Sauce
  • 1 cup chopped walnuts
  • 4 slices good quality white bread, broken up
  • 2 cloves garlic, sliced
  • 2 tablespoon lemon juice
  • 1/2 cup veggie stock
  • Salt and pepper to taste
  • 3/4 cup olive oil

METHOD
Tarator Sauce
Place the walnuts, bread, garlic, lemon juice, stock, salt and pepper in a food processor. Whirl for a few seconds until smooth. Slowly add the oil in a stream through the container top opening while running the processor. The result should look like a mayonnaise.

Cauliflower Tarator
Bring a large pot of water to a boil. Put in the salt, cauliflower, and lemon juice. Boil for 15-20 minutes or until tender. Do not overcook. Drain, let cool and separate the flowerets. Arrange on a serving platter. Pour tarator sauce over the cool cauliflower. Refrigerate. Serve at room temperature. Serves 6.
