Cucumber Raita (Raw)

INGREDIENTS
    • 2 cups pignoli nuts
    • Lemon juice to taste
    • Dash cumin
    • Dash coriander
    • 1/2 onion, minced
    • Dash cayenne (optional)
    • 2 cucumbers
    • Fresh mint (optional)

METHOD
Peel and remove seeds from cucumbers. Shred them and set aside.

Put pignoli nuts in blender and add enough water to create a very thick creamy sauce, almost the consistency of sour cream. Add lemon juice to taste, spices, onion and cucumber. Mix well. Add cayenne if desired.

Add some fresh minced mint to this recipe for another variation.
