Cranberry Pumpkin Bread

INGREDIENTS
    • 1 3/4 cups flour
    • 1 cup sugar
    • 2 t baking powder
    • 1/2 t baking soda
    • 1 t cinnamon
    • 1/2 t nutmeg
    • 1/2 t allspice
    • 1 cup pumpkin
    • 1/2 cup oil
    • 2 eggs worth of the substitute of your choice
    • 1 1/2 cups fresh or frozen cranberries, coarsely chopped

METHOD
Preheat oven to 350F/180C. Grease and flour 8 x 4 inch (20 x 10 cm) loaf pan.

In medium bowl, combine flour, sugar, baking powder, soda, cinnamon, nutmeg and allspice. In mixing bowl, combine pumpkin, oil, and egg substitute. add to dry ingredients, stirring until just moist. Stir in cranberries.

Spread evenly in prepared pan. Bake in preheated oven, 1 1/2 hours, until toothpick inserted in center comes out clean.


NOTES
I made this the other day in an attempt to use up extra pumpkin flesh, and it was so popular and so easy to veganize that I decided it must be shared, although it's not like I made it up or anything. It's off recipesource.com. My co-workers are gonna get it for the christmas potluck if I can hide it from my housemates long enough.

I just attempted this bread for the first time. I did a minor substitution. Instead of 1 cup sugar I did 1/2 c Sugar and 1/2 Brown Sugar and 3 cups of cranberries. I didn't realize my pan was bigger than the one listed. After an hour it has a slighly burnt taste to it, but not to bad. This was my first homemade bread and it's not to bad.
