Rub margarine into flour until like breadcrumbs. Stir in sugar. Add almond essence and egg mixture. Mix to a soft dough.
Divide pastry in half. Roll out to line base of tin. Spread with jam. Roll out remainder of pastry to make lid.
Place in tin. Brush with water. Sprinkle with sugar. Bake for 30 mins approx.
