Coconut Rice

INGREDIENTS
- 1/2 cup onions, chopped
- 2 T margarine
- 3 cloves garlic
- A dash of cinnamon
- A bay leaf
- 1/4 t turmeric
- Salt
- 1 cup rice
- 2 cups water
- 1/3 cup coconut
- Some raisins
METHOD
Saute the onions in the margarine with the herbs and spices. When they get soft and translucent add the rice, water and coconut. Bring to a boil and turn down to a simmer and cover. Cook for about twenty-five minutes or until rice is done, and keep peeking to a minimum. When it's done stir in some raisins and eat.
