Chocolate Frosting

INGREDIENTS
    • 1 cup sugar
    • 6 T corn starch
    • 4 T cocoa
    • 1/2 t salt
    • 2 T oil
    • 1 cup water
    • 1/2 t vanilla

METHOD
Mix sugar, cornstarch, salt, and cocoa in a medium sauce pan. Whisk in the water. Heat over medium until it gets thick and starts to boil. Boil for 1-2 minutes (make sure you don't boil too long, or it will set like toffee). Remove from heat and stir in oil and vanilla. Cool and spread on cooled cake.

Enjoy!

I made this frosting replacing the 1 cup water with 1 cup strong coffee. Everbody loved it!

The recipe does not convey how ridiculously fun this recipe is to make! The transition from liquid to semisolid is positively delightful. I bake just so I have an excuse to make this frosting. Oh, and it's tasty, too.

(Yes, I realize how nerdy this sounds!)

I made this icing, following the recipe exactly, but the icing turned out a liquid. After it had cooled and was still a liquid, I put it in the freezer hoping that further cooling it might work, but that still didn't work. I ended up adding a bunch of icing sugar and some more corn starch, then tried boiling it again (for longer this time). After it had cooled, it was still a liquid, and I ended up using that on my cake. It didn't taste bad, but it was messy and annoying.

I would not use this recipe again.
