Chocolate Cake

INGREDIENTS
    • 1 1/2 cups flour
    • 1/3 cup cocoa powder
    • 1 t baking soda
    • 1/2 t salt
    • 1 cup sugar
    • 1/2 cup vegetable oil
    • 1 cup cold water (or ice coffee)
    • 2 t vanilla extract
    • 2 t vinegar

METHOD
Preheat oven to 180C/350F. Use a small brownie size pan (no greasing required).

Mix all dry ingredients right in pan. Mix all wet ingredients in a separate bowl, except for the vinegar. Add wet ingredients to dry and stir until all dry ingredients are mixed. Add vinegar quickly and stir in. Immediately put in the oven and bake for 25-30 minutes. Cool and then consume!

*** Optional : After you add the vinegar, you can add some frozen cherries, raspberries or cranberries on top of the batter (or you can mix them in beforehand).

This recipe worked, but only through a bit of guesswork! I presumed that a small 't' is teaspoon and a big 'T' tablespoon, but no advice or table was given. Can recipes be edited to show what is meant? Delicious cake anyhow - but add a bit more cocoa - like 1/2 cup. Good icing tip - rice milk, icing sugar and good vanilla extract whipped together is a great final touch.

I'm in the process of updating the recipes that don't specifically say teaspoon or tablespoon.

In the meantime little 't' is teaspoon and big 'T' is tablespoon.

Thanks for the tip about the extra chocolate and icing!

Tried this one in an attempt to give my kids cake again. I have been frustrated by them for 6 years but this one was so rich and yummy! I used the 1/2 cup of cocoa powder and they ate it without frosting at all it was so good! Thanks for this one!

Wonderful recipe - tastes great! I made 2 modifications: 1. I used 1/2 cup cocoa powder; 2. I used only 1/4 cup oil - I substituted 1 2.5 oz. container of Applesauce Baby Food for the other 1/4 cup of oil. The cake turned out very moist & flavorful!!!

i came across almost a copy of this recipe but only with a variation.
Variation was 2 tbsp of vinegar instead of 2tsp of vinegar but still the cake turned out well...:)

if someone could help me understand the use of vinegar in the recipe and as well as the variation difference as stated abv...thanks a million...

Mjj21, in this cake, the vinegar is actually used (in conjunction with the soda) as a leavening agent. Have you ever tried mixing vinegar and baking soda by themselves? We did it as kids in school as a science experiment, so I know it bubbles up and overflows like a volcano.

This cake is a pretty classic example of a "depression cake" - they got the name back in the depression when milk, eggs, butter, etc. were really hard to come by and people had to make do without.

I just tried this for the second time: I increased the cocoa to 1/2 cup, used maple extract instead of vanilla, used strong iced vietnamese coffee instead of water, and used balsamic for the vinegar. It is *so* good!

Using balsamic for the vinegar sounds like an excellent idea - will definite give it a try.
