Cauliflower Coleslaw

INGREDIENTS
  • 1 medium head cauliflower, cut into bite-sized pieces
  • 1/4 small head red cabbage, sliced thinly
  • 1-2 shredded carrots
  • 1-2 stalks celery, veined and diced
  • 1/2 medium green capsicum, seeded and diced
  • 1 cup vegan sour cream
  • 1 cup vegan mayonnaise or "salad dressing" type substance
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 3/4 teaspoon garlic powder (or fresh equivalent)
  • 3/4 onion powder (or fresh equivalent)
  • 1/4 teaspoon oregano, chopped
  • 1/4 teaspoon basil, chopped
  • 1/2 teaspoon parsley, chopped

METHOD
To make dressing: mix mayo and sour cream with spices, and refrigerate overnight.

To make salad: clean and chop vegies, and then toss with dressing from above. If it seems a little dry, add more sour cream/mayo and spices. Refrigerate 4-6 hours or more before serving, stirring once or twice. Colourful and pretty tasty.
