Black Beans and Tofu

INGREDIENTS
  • 1 can black beans
  • 1 pound / 450 grams firm tofu
  • 2-3 tablespoons salsa
  • 1/4 of a yellow onion
  • 2-3 cloves fresh garlic
  • Oregano to taste
  • 1/2 avocado
  • Olive oil

METHOD
Cook the beans in a pot until they are thoroughly boiling (or to whatever degree you like your beans cooked). Add the salsa to the beans while they are in the pot and mix it up.

Heat 2 tablespoon oil in a frying pan (if you don't have light olive oil, I suggest some oil that fries better than olive oil). Slice up tofu into approx 1/2 inch / 19 millimeter cubes, and pan fry until the skin is tan and crunchy.

Slice onion into 1/2 - 1 inch (19 - 25 millimeter) pieces, and garlic into slivers.

Put beans into 2 bowls, and top with the tofu cubes. Decorate with onion, garlic, and oregano.

In a separate bowl, mix the avocado with a dab of salsa and about 2 teaspoon olive oil (or if you have a preferred guacamole recipe, use it - this is the lazy man's guacamole recipe) until it's mashed up and fairly consistent. If you want to use a whole avocado, there is no such thing as too much guacamole so go ahead.

Divide the guacamole between the two servings then eat. Goes well with pale, hoppy beer such as Sapporo or Urquell.
