INGREDIENTS
  • 1 large onion, chopped
  • 4 tablespoons oil
  • 2 medium potatoes
  • 1 medium cauliflower, cut into small florets
  • 2-3 green chillies, chopped
  • 2 sprigs coriander leaves, chopped
  • 5 centimeter / 2 inch piece fresh root ginger, peeled and finely chopped
  • Salt to taste
  • Juice of 1 lemon
  • 2 teaspoons garam masala

METHOD
Fry the onion in the oil for 2-3 minutes or until just tender. Add the potatoes and fry for 2-3 minutes.

Add the cauliflower, stir and fry for 4-5 minutes. Add the green chillies, coriander, ginger, and salt. Mix well.

Cover and cook for 5-6 minutes on a low heat, or until the potatoes are tender.

Sprinkle with lemon juice and garam masala before serving.

I wasn't convinced that the potatoes would cook in such a short period of time, but I diced them small and cooked on high, and it worked out beautifully. This one is a keeper.
