Western Omelette

INGREDIENTS
  • 900 grams / 2 pounds tofu, mashed
  • 1/8 cup nutritional yeast
  • 1 1/2 tablespoons tamari or bragg's liquid aminos
  • 1/2 teaspoon black pepper
  • 1 teaspoon sea salt
  • 1/4 cup spring onions, chopped
  • 1 teaspoon turmeric
Saute
  • 1 cup onions, diced
  • 3 cups red capsicum, sliced
  • 1 cup mushrooms, diced
  • 1 tablespoon braggs aminos
  • 1/8 cup nutritional yeast

METHOD
In a bowl, mix tofu and seasonings (including spring onions). Saute in a little oil and/or water, the onion, then red capsicum, then mushrooms until soft. Season with braggs and nutritional yeast. Add tofu to batter and mix well. Pan fry in an oiled skillet. Flip when browned on one side.
