Turkish Bean Salad

INGREDIENTS
2 x 465 gram / 16 ounce cans of great northern beans, drained (any white bean will do)
1/2 green capsicum, diced
1 ripe tomato, diced
1/2 small onion, thinly sliced
1/4 cup fresh dill, chopped
1 tablespoon vinegar
Lemon Sauce
2 tablespoons olive oil
4 tablespoons lemon juice
1/4 cup fresh parsley, minced
Salt and black pepper to taste
METHOD
Lemon Sauce
Whisk all ingredients together.
Salad
In a deep bowl, combine the beans, pepper, tomato, onion, dill, vinegar and lemon sauce. Mix well, cover and refrigerate overnight.
