Pomegranate Seitan

INGREDIENTS
  • 450 grams / 1 pound chicken-like seitan, cut into big chunks
  • 1/3 cup olive oil
  • 6 cloves garlic
  • 2 teaspoon capers, drained
  • 1/2 cup green olives, pitted
  • 1/2 cup pitted prunes
  • 3/4 cup red wine vinegar
  • 3/4 cup pomegranate molasses
  • 3 sprigs oregano or marjoram
  • 3/4 cup brown sugar, packed
  • 1/2 cup wine, (whatever you have open that's not over-sweet)

METHOD
Mix together everything except the sugar and wine into a big bowl, and leave to soak for a few hours.

Pour it into a colander to strain off the excess liquid (mainly oil), then arrange everything neatly in a casserole. Mix together the sugar and wine, and pour over the top.

Bake covered at 180C/350F for about half an hour until it gets nice and hot. Then take the lid off, stir evrything around a little, and bake uncovered for ten or fifteen more minutes.
