Broccoli & Cauliflower au Gratin

INGREDIENTS
  • 2 cups bite-sized broccoli pieces
  • 2 cups bite-sized cauliflower pieces
  • 2 cups soy milk
  • 1/4 cup light olive oil
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/8 teaspoon nutmeg

topping

  • 1 cup shredded vegan cheddar cheese (4 ounces)
  • 1/2 cup sliced almond

METHOD
Preheat oven to 400 degrees Farenheit.

Place broccoli and cauliflower in boiling water for 3 minutes, then drain off water and set vegetables aside.

In a blender, blend soy milk, oil, flour, yeast flakes, salt and nutmeg until smooth. Place blended ingredients in a 3-quart saucepan. Heat sauce on medium heat until hot and thickened, stirring often.

In a 8x8-inch baking dish, combine the broccoli, cauliflower, and sauce. Sprinkle cheese and almonds on top.

Bake, uncovered, for 10 minutes.


NOTES
Yield: About 6 servings.

In the ingredient section there is no mention of yeast flakes (amt to use), but in the method section it includes yeast flakes in the ingredients to mix together. What amount of yeast flakes are we to use? Thanks!
