Jala-Pinto Dip

INGREDIENTS
    • 2 cups pinto beans
    • 8 cups water
    • 1/2 cup onion, chopped
    • 1/4 cup oil
    • 1 1/2 t garlic powder
    • 2 t chili powder
    • 1/2 t ground cumin
    • 1/4 t powdered oregano
    • 1/4 cup tomato sauce
    • 1 t salt
    • 2 t raw onion, grated
    • 2 t pickled jalapeno peppers, chopped
    • 1 t pickled jalapeno pepper juice

METHOD
Pressure cook the pinto beans and water for 1 hour or until soft. Drain, reserving 1/2 cup juice.

Saute the onion in the oil for 5 minutes. Turn flame to very low and add the garlic and chilli powder, cumin and oregano. Cook for a few minutes, stirring constantly. Add 1/4 cup tomato sauce and fry a few more minutes. Mash beans. Add tomato sauce mixture and mash some more.

Add the salt, reserved bean juice, onion, peppers and pepper juice.

Whip with whisk. Serve with corn chips.
