Potato Poppers

INGREDIENTS
    • 1/2 onion, chopped
    • 1 T margarine
    • 1/2 cup mashed potato
    • 1 cup cooked brown rice
    • 1 T tomato paste
    • 1/2 t salt
    • 1/2 cup whole-grain breadcrumbs

METHOD
Preheat oven to 350F/180C.

Saute onion in margarine. Combine all ingredients and form into 1 1/2 inch / 3.5 cm balls. Bake until delicately browned.


NOTES
Makes about 12

do i have to use the bread crumbs?

You don't need to use the bread crumbs here, but they give a little more substance + texture to the mashed potatoes.
