Green Sauce

INGREDIENTS
    • 1 cup vegetable stock
    • 6 T olive oil
    • 1 green pepper, chopped
    • 3 stalks celery with leaves, chopped
    • 1 onion, chopped
    • 1 head parsley, chopped (without stems)
    • 1 - 1 1/2 t salt
    • 1/8 t garlic
    • 1 t basil
    • 1 t oregano
    • 1/2 t rosemary or coriander

METHOD
Saute onion in half the oil. Stir in herbs and vegetables. Add stock and simmer 5 to 10 minutes. Puree in blender. (If you like a texture to the sauce, blend only 3/4 of the vegeatables.) Return sauce to pan with remainder of oil and seasonings. Continue to cook over low heat for 2 or 3 minutes.

NOTES
Makes an ample 2 cups.

Try 'green spaghetti' for an enjoyable change of pace. This is a rich sauce, but so flavourful that a little bit goes a long way. Try it on mixed vegetables, too, with a restrained hand.
