In a skillet over low heat melt 1 T margarine. Add the flour, salt and pepper. Cook, stirring constantly, until smooth. Gradually add the soy milk and stir constantly until the mixture thickens. Add the soy cheese and stir until it melts. Spoon this sauce over the cauliflower.
In a small bowl, combine the cracker crumbs and 1 T melted margarine. Sprinkle the mixture over the cauliflower. Bake at 325F/160C for 20 minutes or until thoroughly heated.
