Marinated Vegetables

INGREDIENTS
    • 1/4 cup vinegar, red wine or cider
    • 3 T oil
    • 1 clove crushed garlic (or more)
    • 1 t dried rosemary, crumbled
    • 1 t sugar or maple syrup
    • 2 medium red onions cut into 1/2 inch / 1.2 cm rings
    • 1 large yellow squash (1/2 lb / 220 g) cut lengthwise into 1/2 inch / 1.2 cm slices
    • 1 medium zucchini (courgette), cut lengthwise into 1/2 inch / 1.2 cm slices
    • 1/4 lb / 115 g button mushrooms, cut in half

METHOD
In a glass bowl, combine first five ingredients. Add the veg to the vinegar mixture and toss well to coat. Let marinate covered for 2-4 hours, turn the veg once in awhile.

If broiling/grilling: Preheat broiler/grill. Arrange onions and mushrooms in a single layer and broil 5 minutes or until mushrooms are tender. Remove mushrooms to serving platter and continue to broil onions a few more minutes until they're done, then remove. Add squash and zucchini, again in a single layer. Broil approx 8 minutes or until tender. Sprinkle the veg with salt to taste.


NOTES
You can marinate them and eat them raw, or marinate them and grill/broil them.
