Heat oil in a saucepan and add the mustard seeds. Fry until they pop then add yellow split peas and chilies. Fry for 2 minutes more. Add the turmeric, nuts, lemon juice and curry leaves. Cook 5 minutes. Add salt.
Remove from heat. Gradually stir in the boiled rice. Cover until ready to serve. Cook the rice 3 or 4 hours before you make this dish so it has ample time to cool, or use left-over rice.
