Lemon Rice (Neebu Chawal)

INGREDIENTS
    • 3 cups rice
    • 6 cups water

    • 3 T oil
    • 1 t mustard seeds
    • 1 t yellow split peas
    • 2 fresh green chilies, chopped, de-veined and seeded
    • 2 T turmeric powder
    • 2 T roasted peanuts or cashews
    • 4 T fresh lemon juice
    • A few curry leaves, dried or fresh
    • Salt to taste

METHOD
Boil water, add rice, bring back up to the boil then reduce heat to simmer. Cook uncovered until rice is done and water is absorbed. When the rice has cooled, break it apart with your fingers.

Heat oil in a saucepan and add the mustard seeds. Fry until they pop then add yellow split peas and chilies. Fry for 2 minutes more. Add the turmeric, nuts, lemon juice and curry leaves. Cook 5 minutes. Add salt.

Remove from heat. Gradually stir in the boiled rice. Cover until ready to serve. Cook the rice 3 or 4 hours before you make this dish so it has ample time to cool, or use left-over rice.
