Fajitas

Soy - Tofu - Make this your favorite recipe - Upload a new picture for this recipe


INGREDIENTS
    • 1/2 yellow onion
    • 1 bell pepper
    • 2-3 roma tomatoes
    • 1/2 package mori nu light firm tofu
    • 1/2 of a 14 oz / 400 g can of vegetable broth (I like Swanson)

      Marinade for tofu, which includes the amounts you prefer of:

    • Soy sauce
    • Teriyaki sauce
    • Paprika

METHOD
Chop up the tofu into cubes of the size that you like, and let them marinate in a mixture of soy sauce and teriyaki sauce and dash paprika over the top. Let them sit in this liquid and spice while you prepare the rest, or even better, let them marinate for about 30 minutes in the fridge, if you have time. If you want to add other spices, do it before you let it sit, so the tofu absorbs the flavor. I like to use paprika because it has a nice color.

Dice the onion and pepper into small pieces, or whatever size you prefer. Chop up the tomatoes in the same way, but I'd leave these pieces a little bigger.

Dump the tofu, marinade and all, into a skillet. Add the onion and pepper and tomato.

If you want, you can add some meat substitutes at this point, like chicken substitute or beef substitute. I added some crumbled up garden burger one day and it turned out pretty good. I've also seen some "fajita chicken" substitute but I haven't tried that yet.

Add the vegetable broth for some liquid, otherwise the food will scorch. If you feel like you need to, you can add a little more. Let the vegetable broth completely or almost completly boil off, stirring the stuff around a little to keep the food from sticking.

This is a good mix to stuff into corn tortillas, or just to stuff between two slices of bread. It goes good with soy cheese too. :)
