White Bean and Black Olive Soup

INGREDIENTS
    • 2 onions
    • 3 cloves garlic
    • 3 T extra virgin olive oil
    • 850 ml / 1.8 pints / 3 3/4 cups vegetable stock or water
    • 2 tins (14 oz / 435g each) haricot (navy) beans
    • 16 black olives
    • Juice of 1 small lemon
    • As required sea salt
    • As required freshly ground black pepper

METHOD
Chop the onions finely and crush the garlic. saute them in the oil for a few minutes until they start to go brown.

Add the stock and beans. Chop the olives and add them to the pan. Bring to the boil, then lower the heat and simmer, uncovered, for a few minutes.

Add the lemon juice and season to taste. Taste before adding the salt as olives can be salty enough for this soup to require no more. Serve piping hot.

Hi all, I'm glad I found this site- so many great recipes. I've been a vegetarian for 15 years and about 2 1/2 months ago something clicked and I stopped eating all dairy products and any food with eggs in it. That includes some of my favorites such as strawberry shortcake. I am much happier with myself now- both emotionally and physically, but I don't feel I can call myself a vegan because I still eat food with honey in it and most of my shoes are made of leather. I have another problem. I hate tofu. Does anyone have any suggestions?
