Pies - Legume - -
- 1 1/2 pints / 700 ml home-canned tomatoes
- About 1/2 cup water
- 1 chopped onion
- 1 chopped bell pepper
- 1 cup cornmeal
- 1 can corn
- 1 can kidney beans, rinsed and drained
- 1 T good chili powder
- Garlic powder
- 1 can sliced or whole black olives
Mix all together and pour into casserole. Bake at 350F/180C, covered, for 30 min. Uncover to brown top.
Here's a really quick recipe for tamale pie. Unless you like your veggies kinda crispy, I would bake it for a bit longer than 30 minutes. I like topping mine with soy cheddar cheese after it's done. The woman who posted this to vegetarian recipes on yahoogroups also said she mixed her cornmeal with the pie rather than sprinkling it on top. I think it's great that way myself.
