Lentil and Apricot Soup (Version 1)

INGREDIENTS
  • 1 cup red lentils
  • 1 onion, diced
  • 1 teaspoon oil
  • 1 clove Garlic finely diced
  • 4 1/3 cups water or vegetable broth
  • 2 thin slices fresh ginger
  • 1/2 teaspoon turmeric
  • 1 teaspoon cummin seeds, ground
  • 1 teaspoon coriander seeds, ground
  • Pinch of chilli powder or flakes, to taste
  • Handful of dried apricots
  • Lemon juice or lemon salt, to taste
  • Salt and black pepper
  • Chopped coriander, to garnish

METHOD
Wash and drain lentils.

Fry onion, garlic and ginger with oil in a large saucepan until onions are translucent. Add dry spices. Add lentils, apricots and water or stock to pan, bring to the boil, then simmer for approximately 30-40 minutes. Season to taste. Liquidize. Garnish with coriander when serving.


NOTES
Really nice with crusty bread!

This is delicious as a hot soup or as a cold vegetable stew.
