Bean Salad (Version 1)
Salad - Legume -
- 
INGREDIENTS
- Tin of haricot beans, drained and rinsed
- Handful of tempeh, cooked and chopped
- 1 avocado, chopped
- 2-3 pickled artichoke hearts, sliced
- 3-4 sun dried tomatoes, chopped
- 4-5 cherry tomatoes, chopped
- Handful of chopped coriander
- A few torn basil leaves
- Squirt of lemon juice
- Squirt of tomato puree
- 1 T vegan pesto (optional)
METHOD
Mix everything together gently in a large bowl. Eat with a generous portion of leaf salad and good olives.
