Strawberry Spinach Salad

INGREDIENTS
    • 4 large strawberries
    • 120 ml / 4 fl oz vegetable oil
    • 30 ml / 1 fl oz white wine vinegar
    • 1 T each fresh chopped basil and chives
    • 1 t rice syrup or honey substitute
    • 1/4 t fresh mustard
    • Add salt and pepper to taste

METHOD
Blend together the above ingredients and drizzle over fresh spinach, sliced strawberries and lettuce. Sprinkle with pine nuts.
