Indian Spiced Potato Salad

INGREDIENTS
    • 3 potatoes, peeled, diced, and boiled until tender
    • 1 T coriander seeds
    • 2 T oil
    • 1 t mustard seeds
    • 2 t cumin seeds
    • 1-2 green chilis, seeded and chopped
    • 2 cloves garlic, mashed and chopped
    • Fistful of chopped cilantro, or more to taste
    • 1-2 T vegan mayo
    • Salt, to taste
    • Lime juice, to taste

METHOD
Toast the coriander in a skillet over med-high heat until fragrant and browned. Cool and grind into powder.

Heat oil in a pan. When hot, add mustard and cumin seeds. When mustard seeds begin to pop, add chilis, cilantro, garlic, and ground coriander. Cook a couple minutes, until garlic is soft. Add this mixture to the drained potatoes. Mix in a bit of mayo at a time, just enough to bind the salad. Season with salt and lime juice.

This recipe is great. Although mine turned out more like Indian Spiced Mashed Potatoes (probably cause i boiled the potatoes to long or mixed the ingredients too much). I've been looking at vegan recipes for awhile and this one is unmatched. I couldn't even tell it was vegan. I'm gonna make this for all the family functions and for myself.
