Colourful Bean Salad

INGREDIENTS
    • 1 T Dijon mustard
    • 1 T red wine vinegar
    • 3 T olive oil
    • Salt and freshly ground black pepper
    • 425 g / 15 oz can cannellini or butter beans (lima beans)
    • 425 g / 15 oz can red kidney beans
    • 125 g / generous 1/2 cup frozen sweetcorn, thawed
    • 12 black olives, halved and stoned
    • 1 small (sweet) red pepper, deseeded and finely chopped
    • 2 heaped T fresh parsley, chopped

METHOD
Put the mustard, vinegar and oil in a large bowl with some salt and pepper and whisk together until well combined.

Drain both lots of beans and add them to the bowl, together with all the remaining ingredients. Mix gently together.
