Garbanzo Bean Salad

INGREDIENTS
      Dressing

    • 1/4 cup olive oil
    • 2 T apple cider vinegar (or balsamic)
    • 1 t curry powder
    • 1/2 t salt or 1 1/2 T sweet white miso
    • 1/4 t freshly ground black pepper

      Salad

    • 1 x 20 oz / 570 g can garbanzo beans or chickpeas, drained
    • 1/2 lb / 225 g firm tofu, grated
    • 3/4 cup fresh or frozen green peas
    • 1/2 cup diced celery
    • 2 T minced red onion
    • 1/2 oz / 15 g / 1/4 cup fresh cilantro leaves, minced

METHOD
Toss and mix the salad and dressing together, then adjust the seasonings to taste. Since curry powders vary in strength and flavor, you may want to add more or less. Chill and serve on lettuce.

NOTES
This recipe is from "Tofu Quick & Easy" by Louise Hagler. I swear by this salad; it's almost good enough to orgasm over!
