Tajin Khurshuf M'qualli (Moroccan Artichoke Tajin)

INGREDIENTS
    • 1 lb / 450 g fresh or frozen fava beans
    • 4 cloves garlic peeled and crushed
    • 2 cups cooked chickpeas
    • 2 T olive oil
    • 1 T finely chopped ginger
    • Salt and pepper to taste
    • Pinch of saffron
    • 1 x 14 oz / 400 g can artichokes, drained and quartered
    • 1/2 cup pitted green olives

METHOD
Place beans, garlic, chickpeas, oil, ginger, salt, pepper and saffron in a saucepan; barely cover with water and bring to boil. Cook over medium heat for 30 minutes; then add the remaining ingredients. Cook for another 20 minutes; then serve hot.
