Thai Burgers with Peanut-Cilantro Sauce

INGREDIENTS
    • 12 oz / 350 g drained firm tofu
    • 2 cups black beans, cooked and drained
    • 3/4 cup quick cooking oats, uncooked
    • 1/2 cup red onions, finely chopped
    • 1/2 cups carrots, grated
    • 1 t ginger root, grated
    • 2 t soy sauce
    • 2 t brown sugar
    • 2 garlic cloves, minced
    • 1 to 2 t red pepper flakes to taste
    • Vegetable oil for brushing
    • Flour for dusting
    • 1 cucumber, peeled and sliced

      Peanut-Cilantro Sauce

    • 3 T crunchy peanut butter
    • 3 T lemon juice
    • 1/4 cup minced fresh cilantro leaves

METHOD
Mash the tofu in a large bowl. Add beans, oats, onion, carrots, soy sauce, sugar, ginger, garlic and pepper flakes. Mix well then mash until the mixture reaches a uniform consisitancy and holds together. Form mixture into 6 to 8 patties. Brush both sides of the patties with oil and dust with flour. Prepare the grill by brushing the rack with oil. Cook the patties for 4 minutes on each side.

Peanut-Cilantro Sauce

Blend peanut butter and lemon juice then mix in the cilantro.

Serve the patties on toasted buns and top with the peanut-cilantro sauce and cucumber slices.
