2. Chop onion and garlic in a food processor. Add the beets, almond/peanut butter, shoyu, vinegar, and water (if using) and process a few pulses until mixed. Tear the tofu into small pieces, add to the misture, and process again until uniformly chopped.
3. Transfer mixture to a bowl, mix in the gluten flour, and form into burgers. If too gushy, add more flour little by little.
4. Arrange the burgers on an oiled cookie sheet, and bake for 15 minutes on each side until browned.
Per burger: 112 calories, 15 g protein, 4 g fat.
