Chili Burgers

INGREDIENTS
    • 1 cup chopped onions
    • 4 garlic cloves, minced or pressed
    • 2 t olive oil
    • 1/2 cup peeled and grated carrots
    • 1 1/2 t chili powder
    • 1/2 t ground cumin
    • 3 cups cooked pinto or kidney beans (2 x 15 oz / 425 g cans, rinsed and drained)
    • 2 T Dijon mustard
    • 2 T soy sauce
    • 2 T ketchup or 1 T tomato paste
    • 1 1/2 cups rolled oats
    • Salt and pepper to taste

METHOD
Saute the onions and garlic until onions begin to soften. Add carrots, chili powder, and cumin and cook on low for 5 minutes. Set aside.

Mash the beans in a large bowl with a potato masher or back of a spoon. Add mustard, soy sauce, ketchup/tomato paste, and the sauteed vegetables. Mix in the oats. Add salt and pepper to taste.

Moisten your hands and form the burger mixture into six 3 - 4 inch / 8 - 10 cm patties. Lightly spray a nonstick skillet and cook the burgers on medium-low for 5-8 minutes per side. Or bake on sprayed baking tray at 350F/180C for 25 minutes.
