- 
* Omit either mushroom or pepper (depending on what's in the fridge :-) )
* Use other varieties of pepper (green or yellow, or all three - that looks pretty).
* Courgette (zucchini) is also nice instead of mushroom/pepper.
* Add chopped sundried tomato to make it more tomato-y; or a tablespoon of tomato paste.
* Vary the herbs - I like coriander, or oregano.
