Basic Sauce

INGREDIENTS
    • 1 medium onion, chopped
    • 2 cloves garlic, chopped fine or crushed
    • Handful of mushrooms, chopped
    • 1 red pepper, chopped (bell pepper)
    • 1 tin chopped tomatoes
    • Basil
    • Splash soy sauce
    • Splash vinegar
    • Salt & pepper

METHOD
Fry the onion and garlic on a reasonably low heat until softened. Add mushrooms and pepper and fry for a bit longer, until the mushrooms look to be cooked. Chuck in everything else (soy sauce, vinegar, basil, salt & pepper all to taste). Cook for about 10 minutes.

NOTES
Alternatives:

* Omit either mushroom or pepper (depending on what's in the fridge :-) )
* Use other varieties of pepper (green or yellow, or all three - that looks pretty).
* Courgette (zucchini) is also nice instead of mushroom/pepper.
* Add chopped sundried tomato to make it more tomato-y; or a tablespoon of tomato paste.
* Vary the herbs - I like coriander, or oregano.
