KT's Stuffed Manicotti

INGREDIENTS
      Sauce

    • 16 oz / 455 g tomato sauce
    • 6 oz / 170 g tomato puree
    • 1 medium sized green bell pepper, cut into small strips
    • 1 medium chopped onion
    • Basil, garlic, spike, red pepper to taste
    • Some fake ham or fake bacon bits

      Stuffing

    • 1 lb / 450 g firm tofu
    • Package of chopped spinach
    • Palm full of garlic, basil and parsley

METHOD
Sauce

Put all the sauce in a large pan. Simmer on low heat for about 1 hour stirring occasionally. Longer you let it simmer, the more flavourful it becomes. While the sauce is cooking, prepare everything else.

Stuffing

Drain tofu and squeeze out an excess water. Mash everything together. Cook the manicotti by following the directions on the box. When the manicotti is done, preheat your oven to 350F degrees. Put some of the sauce on the bottom of a rectangular baking pan. Now, carefully, I mean carefully, stuff the manicotti with your stuffing. Place the stuffed manicotti in the pan and splatter some more sauce on top. Cover with some foil and bake for 30-35 minutes. Let cool for five minutes before serving.


NOTES
For those Italian-style festivities. This would be a good dish to impress your friends with. I was surprised at how cheesy this comes off as.
