Cold Pasta Sauce

INGREDIENTS
    • A cucumber (unpeeled)
    • Half a small onion
    • A clove or two of garlic
    • Two large plum tomatoes
    • Half a green bell pepper
    • A handful of parsley or cilantro sprigs
    • Lemon or lime
    • Sriracha hot chili paste
    • Salt
    • Olive oil (optional)

METHOD
I just put my favorite salad veggies (examples, above) through the shred blade of my food processor, which makes a finely-shredded mix.

I then squeeze a lemon or lime over it and add some Sriracha hot chili paste (just a little) and salt and mix well. Olive oil is another good addition, but not essential. This is best freshly made.


NOTES
It is very fast to make if you do have a food processor, more of a pain with a grater - and there's that blood on the cutting board if I use a grater...

It's wonderful freshly made, over warm pasta, or stuffed into pita bread halves.

This isn't a warm sauce, but I've been making it a lot and it is scrumptious on pasta for luncheon on a warm spring day. It's really more of a salad I suppose.
