Veggie Burger Mix Bolognese Sauce for Spaghetti

INGREDIENTS
1 onion
1 clove garlic
1 T vegetable oil
115 g / 4 oz / 2 cups mushrooms
2 sticks celery
1 tin (400 g / 14-16 oz) chopped tomatoes
1 packet (125 g / 4 oz / 1 cup) dried veggie burger mix
285 ml / 10 fl oz / 1 1/3 cups vegetable stock or water
As required sea salt
As required freshly ground black pepper
METHOD
Chop the onion and garlic finely. Heat the oil and saute them for 3-4 minutes. Chop the mushrooms and celery and add them to the pan. Continue cooking for a few minutes longer, stirring frequently.
Add the tomatoes, dried mix and stock or water. Bring to the boil, then lower the heat and simmer, uncovered, for 15-20 minutes.
