Peanut Butter Banana Muffins

INGREDIENTS
    • 1 cup all-purpose flour
    • 1 cup whole wheat pastry flour
    • 1 t baking soda
    • 1/2 t salt
    • 1 1/2 cup mashed banana (about 4)
    • 1/2 cup brown rice syrup
    • 1/2 cup peanut butter
    • 2 T flax seeds, ground and blended with 6 T water
    • 1/3 cup applesauce or veg oil
    • 1/4 cup brown sugar or equivalent
    • 1 t vanilla extract

METHOD
Preheat oven to 400F/205C. Oil muffin tins. Stir first 4 ingredients in a small bowl to blend. With an electric mixer, beat bananas, rice syrup, peanut butter, flax mixture, oil/applesauce, sugar, and vanilla in medium bowl. Beat in flour mixture until just combined (will be thick).

Bake muffins until a tester comes out clean, about 20 minutes.


NOTES
Makes 12 muffins. Per muffin (made with applesauce): 209 calories, 10 g fat, 5 g protein, 24 g carbs.
