Preheat oven to 400F/205C. Oil muffin tins. Stir first 4 ingredients in a small bowl to blend. With an electric mixer, beat bananas, rice syrup, peanut butter, flax mixture, oil/applesauce, sugar, and vanilla in medium bowl. Beat in flour mixture until just combined (will be thick).
Bake muffins until a tester comes out clean, about 20 minutes.
Makes 12 muffins. Per muffin (made with applesauce): 209 calories, 10 g fat, 5 g protein, 24 g carbs.
