Green Beans with Tomatoes and Olive Oil

INGREDIENTS
    • 1/2 cup olive oil
    • 1 small red onion, finely diced
    • 2 garlic cloves, minced
    • 2 tomatoes, seeded, and finely chopped
    • 1 1/2 lb / 675 g fresh green beans, trimmed and cut in half lengthwise
    • Salt and freshly ground black pepper
    • 3 T chopped fresh Italian parsley

METHOD
Heat the oil and cook the onion until translucent but not brown. Add the garlic, tomato, and beans. Season with salt and pepper.

Add 1 1/2 cups water and bring the mixture to a boil. Lower the heat, cover, and simmer gently for about 30 minutes, or until the beans are tender but not mushy.

Transfer the mixture to a serving plate with a garnish of chopped Italian parsley.
