Elvis' School Days Sloppy Joes

INGREDIENTS
    • 1 cup water
    • 1/4 cup dehydrated onion flakes
    • 18 lb / 8.2 kg TVP reconstituted in vegetable stock
    • 5 T unrefined sugar
    • 6 T prepared mild mustard
    • 2 quarts plus 2 cups (5 L plus 2 cups) tomato ketchup
    • 5 T salt
    • 100 hamburger buns

METHOD
Add the water to the onion flakes and let stand for 20 minutes. Drain. Saute onions until clear but not brown in a small amount of oil.

In a huge vat, saute the reconstituted TVP in a some oil until lightly browned. Add the onions and remaining ingredients. Simmer for 20 minutes to allow seasoning to be absorbed. The mixture should be moist but hold its shape when placed on a bun. Place approximately 3 oz / 85 g of the mixture on each bun.

Note from school recipe file: To prevent the buns from becoming soggy, sandwiches should be made up on the serving line. They should not be prepared ahead of time.
