Elvis' Army Days: Shit on a Shingle

INGREDIENTS
    • 2 lb / 900 g margarine
    • 1 lb / 450 g flour
    • 4 cups soy cream or soy milk
    • 4 gallons / 18 L vegetable stock
    • 7 lb / 3.2 kg seitan, chopped
    • 2 bunches parsley, chipped fine
    • 1/2 oz / 15 g black pepper
    • 130 slices of bread, toasted

METHOD
Melt the margarine in a large pot and add the flour. Cook for a few minutes to brown the flour. Add the soy cream/ soymilk and the stock, stirring constantly to prevent lumping. Add the seitan and cook 5 minutes. Add the parsley and the pepper and serve on hot toast.

NOTES
During the last week of Elvis' stint in the US Army, he served at Fort Dix in New Jersey where he had the most notorious dish of US military life - Creamed Chipped Beef on Toast - which is more commonly known as: Shit on a Shingle.
